Executive Chef Manager

Hiring a highly skilled Executive Chef Manager to oversee daily kitchen activities at Delaire Graff Estate. This is a key position that requires leadership, organization and attention to detail.
Job DescriptionThe successful candidate will be responsible for managing the kitchen staff in the Head Chef's absence, providing guidance to junior staff members, overseeing stock and ingredients, and ensuring food quality and freshness.
- Main Responsibilities:
- Manage and lead the kitchen team effectively
- Provide guidance and training to junior staff members
- Oversee kitchen stock and ingredients, maintaining a first-in, first-out system
- Ensure all food products are properly dated and organized for quality assurance
- Maintain cooking stations stocked during prime operation hours
- Train and assess staff on the job
- Order food and products efficiently, minimizing waste and working within budget constraints
- Supervise food preparation and presentation to meet restaurant standards
- Collaborate with the Head Chef to maintain kitchen organization and staff development
- Assist in menu creation
- Maintain health and safety standards
- Manage staff leave and rosters
- E nsure CDPs are familiar with reservations, events, and menu requirements
- Quality-check each dish before it leaves the kitchen
- Culinary Diploma or equivalent qualification
- A minimum of 4 years' experience in a senior chef role
- Possession of a valid driver's license and own transport
- Strong leadership and management skills
- Ability to work well in a team environment
- Familiarity with basic computer skills (Word, Excel, Outlook)
- Exceptional customer-service skills
- Excellent written and oral communication skills
- Strong organizational skills
- Attention to detail
- Availability to work varied shifts, including evenings, public holidays, and weekends
Estimated Salary Range: R250,000 - R350,000 per annum, based on experience and qualifications
