About the Role:

We are looking for an experienced and skilled Sous Chef to join our team at Leeu Collection South Africa (Pty) Ltd. The successful candidate will assist the Executive Chef in maintaining high standards of food quality, presentation, and service.

Main Responsibilities:

  • Assist the Executive Chef in managing kitchen operations, including menu planning, food preparation, and presentation.
  • Supervise and train junior kitchen staff to ensure they have the necessary skills and knowledge to perform their duties.
  • Monitor and control kitchen costs, including inventory management, ordering supplies, and maintaining a clean and organized kitchen environment.
  • Ensure that all kitchen staff adhere to health and safety standards, including proper food handling, storage, and disposal.

Requirements:

  • Diploma in Professional Cookery or equivalent experience.
  • At least 5 years of experience in a similar role, preferably in a 5-star restaurant.
  • Excellent communication and leadership skills.
  • Ability to work under pressure and maintain a high level of professionalism.

Working Relationships:

  • Reports to the Executive Chef.
  • Supervises junior kitchen staff.

Health and Safety:

  • Ensure compliance with all relevant health and safety regulations and standards.
  • Maintain a clean and organized kitchen environment to prevent accidents and ensure the health and safety of staff and guests.

Induction and Training:

  • Ensure that all new staff members receive thorough induction and training on kitchen policies, procedures, and equipment.
  • Provide ongoing training and development opportunities to enhance staff skills and knowledge.

Performance Management:

  • Monitor and evaluate staff performance regularly to ensure that they are meeting expectations.
  • Provide constructive feedback and coaching to improve performance and address any areas of concern.

Other Duties:

  • Perform other duties as assigned by the Executive Chef or other management personnel.
