The Night Chef at The Royal Portfolio is a critical role that requires exceptional leadership and culinary expertise. This position ensures the smooth operation of the kitchen during the night shift, from 23:00 to 08:00, and maintains the highest standards of the hotel.
Main Responsibilities:
- Assist the Executive Chef and Senior Sous Chefs in managing the kitchen department, ensuring all night shift duties are completed.
- Maintain and uphold all kitchen systems, standards, and service to the highest level.
- Monitor kitchen personnel in the absence of the Executive Chef and Sous Chefs, and be the Senior Chef on duty during night shift.
- Provide in-depth handovers to kitchen staff regarding groups, VIPs, special events, meal themes, dietary requirements, and other pertinent information.
- Monitor health and safety, know the fire policy, and evacuate staff if necessary.
- Collaborate with the Front Office Department for night audits.
- Ensure prompt, genuine, warm, and efficient attention and service to guests throughout their stay.
- Address guest needs and complaints quickly, efficiently, and courteously.
- Adhere to the highest cleanliness and hygiene standards.
- Complete all necessary mise en place before the end of the shift.
- Report and address repair and maintenance issues, and assist new staff with their training needs.
- Manage stock levels according to budgets and understand and live The Royal Portfolio's Purpose and Value Statement.
Requirements, Qualifications, and Expectations:
- Tertiary Culinary Diploma (or higher) from a recognized institution.
- At least 5 years' experience, with 2 years in a Night Chef role.
- Fair and firm management abilities, with high influencing skills, and strong knowledge of food and beverage.
- Creative, innovative, and hands-on approach to operational aspects.
- Strong administration skills, and excellent communication skills (excellent command of English, reading, and writing).
- Punctual, reliable, pro-active, and a team player with respect for all colleagues.
- Of sober habits and mature enough to self-manage.
