Key Responsibilities:

  • Oversee the daily operations of the butcher shop, ensuring that all meat and fish products are prepared and presented to the highest standards.
  • Implement and maintain strict food safety and sanitation protocols, adhering to MSC Cruises' quality standards.
  • Supervise and train junior staff members in the preparation and presentation of meat and fish products.
  • Develop and implement new recipes and menu items, ensuring that they meet the highest standards of quality and presentation.
  • Collaborate with the Executive Chef to plan and execute special events and menus.
  • Conduct regular inventory and ordering of meat and fish products, ensuring that stock levels are maintained at optimal levels.
  • Implement and maintain efficient and effective systems for the storage and handling of meat and fish products.
  • Ensure that all staff members are aware of and adhere to MSC Cruises' policies and procedures regarding food safety and sanitation.
  • Conduct regular quality control checks to ensure that all meat and fish products meet the highest standards of quality and presentation.
  • Develop and implement strategies to minimize food waste and reduce costs.
  • Perform other related duties as assigned by the Executive Chef.

Requirements:

  • High school graduate or equivalent.
  • Sound knowledge of MSC Sanitation Standards protocols relating to food safety and HACCP controls.
  • Certified medically and physically fit and acceptable to work in a food preparation area.
  • Proven ability to work in a harmonious productive team environment.
  • One year's work experience in a similar role.
