RESPONSIBILITIES: You will be responsible for:

Ensurethat the utmost care is taken during preparation of food, taking into account,taste, quality, garnishing, and presentation as per clientspecification. Guide, assistand monitor the performance of assigned sectionsduring the shift; Carry out closesupervision and inspection through all the production sectionsin both processes and staffand report findings thereby ensuring that staff performance meets the production deadline to avoid any delaysfor the airlines, etc.; Maintain wastagerecords and ensure that food preparation is done in an economical manner and establish controls to minimizefood and supply; Ensure that kitchen equipmentis used in a proper and safe manner and evaluateperformance of kitchen equipment to ensure continuity of the processes; Check daily that all fresh produce received is as perspecification, ensure proper stock rotationand place the requiredstore requisitions; Coordinate with other departments as necessary in order to complete assignedwork; Ensure that all cooking and blast chilling (CCP-3 andCCP-4, respectively) records are properly completed on-time as per the HACCPprocedure; Preparemonthly forecasts for raw materials for the assigned section based on requirements and production schedule; Provide professional guidancefor all ingredients and foodstuffs to ensureconsistent recipe flavorprofiles; and To activelyparticipate in menu presentations. Determine how food shouldbe presented, and create decorative food displays Determine production schedules and staff requirementsnecessary to ensure timely deliveryof services Inspect supplies, equipment, and work areas to ensureconformance to established standards. Monitor sanitation practices to ensure that employeesfollow standards and regulations Adhereand comply to the company’s HACCP Policy’s rules and regulations including, but not limited to: personalhygiene, CCP documentation, food storage, hand-washing rules and regulations, glove policy, sickness policy. To ensurethat all equipment and materials are not left in dangerous state.

Qualifications

Grade 12 Grade 12,Certificate in Patisserie & Food Prep Computer Literacy

Experience

2 Years’ Ability to prepare Asian Cuisine will be advantage  Skills Ability to Cook well Consistency Portion and Waste ControlMonitoring Multi-task Hygiene Control

Competencies
