Werf Restaurant Duty Manager

**Purpose of the Role & Reporting Line**

The incumbent is a member of the Werf Restaurant Team and reports directly to the **Werf Restaurant Manager.**

The primary focus of the Duty Manager role is the responsibility of managing all operations within the restaurant. The objective of the position is to maximize sales and revenue through customer satisfaction, sound controls and employee engagement.

**Duties and Responsibilities**
- **Financial & Commercial**_
- Maximize employee productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
- Ensure the restaurant operate in line with maximizing profit while delivering on the brand promise.
- Enhance operational efficiencies and cost savings by ensuring the restaurant operates at the ultimate cost structure while also delivering on the brand promise to the guest.
- Proactively manage costs both product cost of sale and Opex based on key performance indicators and operational control systems.
- Ensure company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to, including the timely and accurate reporting of financial information.

.Reduce waste and drive responsible consumption across outlets
- **Operational**_

.Ensure that standard operating procedures are followed in the restaurant according to brand standards.
- Ensure daily stock takes are done and balances with BI report, investigate where necessary and report daily to Food and Beverage Manager

.Ensure briefings before breakfast and lunch are done to pass on relative information to staff regarding the specific shift
- Ensure weekly orders are done using par stock and checked by Food and Beverage Manager
- Ensure all guests receives Go Review card to give us feedback on their experience
- Co-ordinate work schedules
- To make sure that the restaurant employees work in a supportive and flexible manner with other departments, in a spirit of the company values.
- Stay abreast of local and global trends and developments, regulations, to effectively manage governance, legal, environmental, economic and other risks in an increasingly complex environment.
- Monitor food and beverage products served throughout the operation and actively search/strive for continuous improvement.
- Ensure that the Food and Beverage activities are aligned with the respective Company Strategy.

.Ensure daily cash-up and handovers are complete before end of shift
- Ensure ERS is update daily accordingly
- Load all maintenance issues on the app and follow up to ensure all maintenance work are completed

- Highlight opportunities to the Restaurant Manager and relevant departments by seeking and drawing input and inspiration from diverse stakeholders to generate ideas for new products, processes and markets resulting in competitive advantage
- **Leadership & Management**_
- Ensure punctuality and appearance of all restaurant employees, making sure that they wear the correct uniform and maintain a highest standard of personal appearance and hygiene.
- Maximise the effectiveness of all Team Members by developing skills and abilities through appropriate training, coaching, and/or mentoring.
- Conduct Performance Development Discussions with outlet waitrons, barman and pass co-ordinators through weekly 1:1 sessions and to support them in their professional development goals. Ensure that they in turn conduct weekly Performance Development Discussions with their employees.
- Encourage all team members to be creative and innovative, challenging and recognising them for their contribution to the success of the operation.
- Support the implementation of company policy, demonstrating and reinforcing the company’s Values and Culture Characteristics and ensure that all employees have a complete understanding of and adhere to employee rules and regulations.
- Ensure that all team members follow, company and local rules, policies and regulations relating to fire, food and security safety.

**_Customer Service_**
- Ensure that all employees deliver the brand promise and provide exceptional guest service at all times.
- Ensure that employees also provide excellent service to internal customers in other departments as appropriate.
- Spend time in guest areas observing employee-guest interaction and talking with guests, working through duty managers to coach employees in guest service skills as necessary.
- Management of all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.
