Executive Chef Assistant

As a Junior Sous Chef at Mount Nelson, a Belmond Hotel, you will be part of a dynamic team that brings culinary excellence to life through innovative and unique gastronomic experiences. In this role, you will work closely with your team of skilled colleagues to prepare high-quality food from recipes, ensuring exceptional presentation and flavor.
Key Responsibilities:- Assist the Sous Chef in creating menu items, recipes, and costings, ensuring alignment with the hotel's culinary vision.
- Maintain a deep understanding of cooking methods, styles, and alternatives, applying this knowledge to enhance menu offerings.
- Produce all necessary food for food service operations, adhering to quality and quantity standards.
- Ensure the allocated section is always clean and well-organized, with all prep completed to the highest standard.
- Run the shift independently, supervising staff and maintaining discipline in the kitchen.
- Order, rotate, and take stock of inventory, ensuring minimum par levels and maintaining quality control.
- Proactively manage inventory, maintaining minimum par levels and ensuring correct stock rotation procedures.
- Maintain quality and quantity control in all aspects, from portion control to freshness of the product presented.
- Ensure correct stock rotation procedures are followed, and the quality of raw material is consistently high.
- Supervise and guide junior staff as required, adhering to set standards and promoting a culture of excellence.
- Estimate daily production needs and check the quality of raw and cooked food products to ensure standards are met.
- Maintain full awareness of all menu items, their recipes, methods of production, and presentation standards.
- Deputise in the absence of senior chefs, ensuring seamless operation and maintaining high standards.
- Maintain and implement preservation standards for the proper handling of all food products at the right temperature.
- Operate and maintain all department equipment, reporting any malfunctioning.
- Ensure effective communication between staff, promoting a positive and productive work environment.
- Responsible for hygiene, safety, and correct use of equipment and utensils, adhering to hotel standards.
- Periodically check the expiry dates and proper storage of food items in the section.
- Guide and train subordinates daily to ensure high motivation and an efficient working environment.
- Assess quality control and adhere to hotel service standards, ensuring exceptional guest experiences.
- Carry out any other duties as required by management, promoting a culture of excellence and teamwork.
- Monitor portion and waste control to maintain profit margins, ensuring efficient operations.
- Ensure that all potential hazards are reported immediately and rectified, maintaining a safe working environment.
- Be able to make recommendations for alternatives, understand and action all required dietaries and allergens as requested.
- Perform other administrative tasks as communicated by superiors, ensuring seamless operation.
- Resolve possible disputes within the kitchen and report any unresolved issues, promoting a positive work environment.
- 3-5 years' relevant kitchen experience in a supervisory role.
- Computer literate in MS Excel, MS Word, and Gmail.
- Good communication skills.
- Good knowledge of hygiene and safety standards.
- Ability to work with little supervision.
