Duties & Responsibilities

  • Effectively managing the butchery department/team ensuring delivery of the meat markets.
  • Monitor and report daily on butchery sales performance per store.
  • Ensure that orders are checked in accordance with the rate of sales in relation to the frequency of deliveries as well linked to the availability of stock from suppliers to ensure that butcheries are trade ready.
  • Conduct investigations into GPs (Gross Profit), overstocks, shrinkage, and expiry dates.
  • Being part of butchery stock takes once a month and global stock take.
  • Conduct daily visits to the store butchery department, and provide feedback addressing butchery performance and conditions to Senior Management.
  • Product development (recipes)
  • Effectively manage the financial income statement per butchery.
  • Ensure customer service excellence.
  • Monitor customer's instore experience during store visits to assess customer satisfaction with the meat market/butchery products.
  • Ensure proper staffing is maintained to meet projected sales and customer experience needs.
  • Monitor compliance with standardised brand and image, cutting specifications and packing standards.
  • Ensure a clean, neat, organized, and safe work environment in accordance with the Store's OHS policy.
  • Ensure that all butchery departments are HACCP compliant.
  • Developing a HACCP plan and implementing it in all butcheries.
  • Observe and ensure that staff members working in the butchery are wearing the correct and appropriate protective clothing.
  • Ensure that all equipment is maintained and in good working order, address any maintenance or equipment problems immediately.
  • Stock control (midmonth stock take & global stock take)
  • Perform other adhoc duties that may be assigned by Senior Management.

Buying

  • Negotiate best prices for all butchery lines (pork, beef, etc)
  • Ensure highly competitive butchery products prices to enable the Goal Supermarkets to compete and better the competition prices to the public, while maintaining healthy profit.
  • Purchase and negotiate butchery lines to ensure that the butcheries operational needs are met, taking into the quality that are being supplied by supplies.
Work closely with the marketing department to determine weekly promotional lines and leaflets.

  • Identify customer preferences and trends and reacting to any changes in customer demands.
  • Supplier involvement on the shop floor to increase sales.
  • Maintain a relationship with new/old service provides and suppliers.
  • Communicate any supply problems which may impact on business operations.
  • Monitor market trends, competitor strategies and market suppliers.
  • Negotiate contracts, improve prices and terms of business with suppliers and review opportunities to make business savings.
  • Provide analysis on cost, new and existing and review cost reduction activities.

Staff Welfare & Customer Experience

  • Provide and maintaining regular performance feedback to the butchery team leader.
  • Provide clear direction and ongoing feedback regarding any operational changes to the butchery department.
  • Coach, mentor and encourage the butchery team.
  • Ensure that all staff members provide excellent customer service.
  • Deal with customer conflict by providing resolutions

Desired Experience & Qualification

  • Gr. 12 National Senior Certificate (compulsory)
  • Degree or Diploma in Business, Finance or Retail Management or related field preferred.
  • 5+ years in demonstrable experience in managing a butchery, at a regional management level.
  • 5+ years' experience in buying and negotiating.
  • Excellent and effective negotiation skills (compulsory)
  • Good communication, negotiation, interpersonal and influencing skills and a dealmaker. Ability to get the best possible price.
  • Excellent understanding of the retail and butchery market.
  • Track record of similar experience/responsibilities in the past.
  • Must be able to work retail hours (weekends & public holidays)
  • Valid Driver's License
  • Ability to proficiently read, write, speak, and analyze English language.
  • Ability to perform basic computer functions.
