Group Executive Chef

Group Executive Chef for a well established restaurant group in Gardens, Cape Town.
Non negotiable requirements:
Must be located in Cape Town or willing to relocate
Must have experience in a Group Exec role for at least 5 years previously
Must be well versed in managing a large contingency of staff (250+)
Roles and Responsibilities
Development of new recipes
Be active in cost controlling and maintain of food cost
Train and manage kitchen personnel and supervise/coordinate all related culinary activities
Create custom menus for functions and determines portions sizes
Manage all recipe folders and keep them updated
Manage waste and staff food records
Staff training
Ensure staff adhere to recipes in place to facilitate consistency.
Ensure all food is prepared as per food preparation requirements
Ensure meals are produced on time, and sufficient quantities are available for the various areas
Maintain stock levels of all kitchen supplies
Oversee and supervise all kitchen staff
Ensure all staff are aware of their duties and what is expected of them
Teach new staff skills they require to perform their roles to the required standard
Delegate duties to kitchen staff as per the menu requirements
Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
Give staff feedback on their performance to enable staff development
Managing kitchen staff HR
Manage kitchen operating equipment stock
Ensure wastage is minimized by careful supervision of food preparation methods
Ensure proper hygienic storage methods are utilized to prevent food loss
Oversee the ordering and control of stock levels
Ensure staff are aware of and follow safe work practices at all times
24 Managing a team of Head Chefs in each kitchen
