Pastry Chef Sous Chef

PURPOSE OF THE JOB
As pastry chef, you'll be responsible for the smooth operating of the pastry section, while working together with the Executive chef & Senior Sous chef. You will also be responsible for planning production requirements, preparing & baking and decorate various desserts.
PRINCIPAL ACCOUNTABILITIES/ KEY RESPONSIBILITIES
· Ensure the creation of high end quality pastries and desserts
· Ensure that all items produced have recipes & yield volumes that you will furnish to the Executive chef.
· Bake fresh pastries, desserts and breads for all outlets, restaurant, function venues & Manja's / Cool beans.
· Schedule production of all pastry items to maintain an inventory of fresh, consistent, rotated products at all times.
· Taste all products produced to assess quality.
· Liaise with Executive Chef to initiate the development of standardized recipes for all pastry items.
· Timeously produce high quality levels of bakery and pastry items based on forecasted needs
· Minimize waste and maintain controls to attain forecasted food cost.
· Notify superiors of any foreseeable shortages before items run out.
· Keep up with baking trends and best practice.
· Be well versed with food costing of pastry items.
· Keep Executive informed on stock levels and requirements for pastry section. (The Pastry Chef does not directly supervise other staff members but works with Trainees.)
Minimum Hiring Standards
- Diploma in Culinary Arts
Experience
3 - 5 year relevant experience
