Kitchen Assistant

Reporting to the Restaurant Management Team, Kitchen Manager, and Kitchen Supervisor this position's primary responsibility is producing and delivering high quality food in an efficient manner, maintaining health and hygiene standards. You will follow all operational requirements as set out by the group, and implement into your daily duties all new menus, campaigns and training initiatives
General Responsibilities:
- Follow all aspects of food preparation and presentation as set out through head office.
- New Kitchen Training programmes are implemented and adhered to in your duties
- Ensure food is prepared in a manner that ensures mínimal wastage
- Ensuring health and hygiene standards are maintained
- Utilizing kitchen equipment in a safe and responsible manner, avoiding any damage
Responsibilities by Function Consistent delivery of high quality food
- Prepare dishes by constantly following Recipe and Flash cards
- Employ Prep sheets and ensure that your section is adequately prepped for service
- Execute service periods smoothly and organized
- Assist other sections where needed
- Report any possible stock shortages to Management immediately
- Follow dating system to ensure freshness of items
Cost Control & Stock Management
- Use Prep sheet and par levels to control volumes of food prepared to reduce wastage
- Prepare all food in efficient manner, reduce and record wastage
- Store prepared food in a safe and Hygenic manner
- Follow recipe volumes and don’t over portion in dishes
Health & Hygiene Management
- Use correct chemicals for cleaning duties
- Perform daily cleaning duties and ensure its signed off by Management
- Perform weekly cleaning duties
- Cleaning as you go
- Ensure food is handled and stored in a food safe manner
- Ensure that you are dressed according to Specification and maintain good personal hygiene
