The Kitchen Scullery plays a crucial role in maintaining the cleanliness, hygiene, and smooth running of the kitchen. As part of the estate's culinary team, this position supports chefs and kitchen staff by ensuring that all kitchen areas, equipment, and utensils are cleaned, sanitized, and well-organized. The Scullery contributes directly to the efficiency, safety, and high standards that define Blaauwklippen and Newmark Hotels & Reserves.

Minimum Requirements
  • Previous experience in a kitchen, hospitality, or cleaning environment advantageous but not essential.
  • Basic understanding of hygiene, cleaning, and food safety standards.
  • Strong attention to detail and commitment to maintaining high cleanliness levels.
  • Ability to work efficiently in a fast-paced environment.
  • Team-oriented attitude and willingness to assist wherever needed.
Duties and Responsibilities

1. Dishwashing & Cleaning

  • Wash, rinse, and sanitize dishes, utensils, glassware, and kitchen equipment used during food preparation and service.
  • Ensure all items are cleaned to a high standard and returned to their designated areas promptly.

2. Equipment & Work Area Maintenance

  • Clean and sanitize kitchen equipment, including ovens, stoves, grills, cutting boards, and sinks.
  • Maintain cleanliness of kitchen surfaces, floors, and storage areas throughout service.

3. Waste & Recycling Management

  • Dispose of food waste and rubbish correctly and efficiently.
  • Keep refuse and recycling areas tidy and compliant with hygiene standards.

4. Support to Kitchen Team

  • Assist chefs with basic food preparation tasks such as peeling, washing, or portioning ingredients when required.
  • Ensure the kitchen is stocked with clean utensils, crockery, and cookware to support continuous operations.

5. Stock & Supply Maintenance

  • Monitor cleaning supplies, detergents, and sanitation materials, alerting supervisors when replenishment is needed.
  • Keep scullery and storage areas neat, organized, and properly labeled.

6. Hygiene & Safety

  • Follow strict food safety, hygiene, and sanitation procedures at all times.
  • Handle cleaning chemicals safely and use protective equipment as instructed.

7. Teamwork & Communication

  • Work collaboratively with chefs, kitchen assistants, and service staff to ensure efficient kitchen flow.
  • Communicate any maintenance or safety issues immediately to supervisors.

8. Personal Presentation & Hygiene

  • Maintain a neat, clean, and professional appearance at all times.
  • Adhere to Blaauwklippen's grooming and uniform standards, including appropriate protective wear.

9. End-of-Shift Duties

  • Complete closing tasks, ensuring the kitchen and scullery areas are spotless, organized, and ready for the next shift.
