Saucier Position Overview

We are seeking an experienced and skilled Saucier to join our culinary team at Crew Life at Sea. As a key member of the team, you will be responsible for leading the saucier station and contributing to the development of new menu items. If you have a passion for food preparation and presentation, excellent leadership skills, and the ability to work well under pressure, this could be the perfect opportunity for you.

  1. Main Responsibilities:
  2. Collaborate with the Executive Chef to manage galley operations, including food preparation, cooking, and plating.
  3. Oversee the saucier station, ensuring all sauces, soups, and gravies meet the highest standards.
  4. Develop new menu items, taking into account guest preferences and dietary restrictions.
  5. Train and supervise junior chefs and kitchen staff, promoting a culture of excellence and teamwork.
  6. Maintain a clean and organized work environment, adhering to food safety and sanitation guidelines.
  7. Manage inventory and order supplies to keep the saucier station well-stocked.
  8. Contribute to daily and weekly menu planning, taking into account ingredient availability.
  9. Communicate effectively with the culinary team to ensure smooth operations.
  10. Adhere to company policies and procedures, including safety protocols and grooming standards.

Required Skills:

  1. Minimum 3 years of experience as a Sous Chef Saucier or similar role in a high-volume restaurant or hotel.
  2. Culinary degree or equivalent experience preferred.
  3. Extensive knowledge of various cooking techniques, including sautéing, braising, and roasting.
  4. Strong understanding of flavor profiles and ability to create balanced and flavorful sauces.
  5. Excellent leadership and communication skills.
  6. Ability to work well under pressure and in a fast-paced environment.
  7. Attention to detail and a passion for creating visually appealing dishes.
  8. Ability to work long hours and adapt to a flexible schedule.
  9. Must be able to pass a pre-employment background check and drug test.
