Main Responsibilities

The Royal Portfolio seeks a skilled Sous Chef to oversee the culinary department at Malewane Lodge. As a key member of the team, you will be responsible for planning, organizing, and directing the kitchen operation to ensure maximum guest satisfaction.

  • Interact with guests to gather feedback on product quality and service levels.
  • Respond to and handle guest complaints.
  • Develop creative menus and prepare food according to standard recipe cards.
  • Stay informed about new and local produce, as well as the latest product trends.
  • Accurately cost recipes and review product yields regularly.
  • Promote portion control and minimize waste.
  • Ensure sufficient food stock levels in line with hotel occupancy and function forecasts.
  • Be aware of all financial budgets and goals.
  • Maintain kitchen equipment safety and cleanliness.
  • Prepare and update culinary operations manuals.
  • Ensure the department adheres to company and hotel policies.
  • Motivate team members and provide positive feedback on work performance.
  • Oversee weekly work schedules and annual leave planners.
  • Ensure chefs maintain a neat and presentable appearance.
  • Collaborate with the Front of House Manager and respective teams.
  • Initiate maintenance reports and work orders.
  • Delegate responsibilities to subordinates as needed.
Requirements & Qualifications
  • Culinary diploma (or higher) from a recognized institution.
  • At least 8 years of experience, with 2 years in a management position.
  • Effective management and influencing skills.
  • Strong administration skills.
  • Creative and innovative approach.
  • Strong knowledge of food and beverage.
  • Hands-on operational expertise.
  • Excellent communication and computer skills.
  • Initiative and self-motivation.
  • Ideal training and coaching skills.
