Restaurant Operator

An upmarket establishment is seeking an experienced restaurant Operator to join its team based in Waterfall Midrand.
Earn a basic salary of R30'000.00 (with 10% profit share) or R35'000.00 (with 5% profit share).
- Off days: 1 full day and two half days off (Come in at 4pm on Half days). No off days on Friday’s, weekends or public holidays.
**FINANCE RESPONSIBILITIES**:
- Full financial control and management of store specific finances.
- Deliver a food cost of 40% - (3-month average)
- Ensure that the store is profitable and delivers a minimum of 15% return before tax.
- Management of daily expenses and all financial responsibilities
- Compilation & overseeing and approval of payment schedules
- Compilation & overseeing and approval of waiter tips and payments thereof
- Managing of assigned deductions to staff for uniforms and stock shortages
- Signoff and approval of employee monthly salaries
- Oversee, audit and sign-off of all cash ups
- Reconciliation of bank statements and payment recons on a bi-weekly basis which is inclusive of a midweek check as well as weekend check and compilation of Excel report.
- Reconciliation of credit card statements and sign-off thereof
- The Operator is responsible for cash flow management and ensure that there are sufficient funds in the account to pay operating costs
- Responsible Management of COH (cash on hand) in current vs call accounts on an ongoing basis
- Release of payments on a weekly basis on agreed days
- Adhere to all financial policies and procedures
- Report all irregularities and align with Financial Director at all times
- Analysis & Interpretation of monthly income statement in preparation for finance meetings
**ADMINISTRATIVE RESPONSIBILITIES**:
- Full store and business entity administrative responsibility.
- Ensure that all employees as well as the Operator fulfil their respective admin responsibilities and that this is met within the respective timelines.
- Daily Meter readings and control checks (water, gas etc) as well as compilation of report with previous months readings. Reporting of variances and usage patterns
- Oversee Daily Check sheets, opening & closing procedures and SOP’s
- Maintain employee discipline. Execute warnings and disciplinary hearings in conjunction with Human Resources
- Fulfilling of daily operational functions within the store
- Responsible for repair and maintenance of store, reporting thereof and execution of such through contractors (if required).
- Taking daily Fridge and Freezer Temperature readings
- Ensure/oversee waiters are assigned sections and duties daily
- Confirm stock purchase orders match deliveries and payments
- Coordinate all relevant work permits with HR for verification before employment
- Ensure all licenses & maintenance certificates are in place and renewed timeously.
**STOCK CONTROL RESPONSIBILITIES**:
- Developing par-levels and maintaining of order sheets
- Ordering of stock. Processing of these orders
- Ensure that stock received is executed properly
- Ensure that invoices are captured on the system immediately
- Do regular price comparison and liaise with suppliers to negotiate price
- Ensure quality control and implementation of franchise food standards
- Responsible for stock control and manage recouping of shortages
- Ensure daily and weekly stock counts and address variances
- Bi-weekly food cost count on all stock
- Responsible for month end stock take
- Conduct daily stock freshness and rotation checks with Chefs and Managers
- Ensure that shop wastages are kept to an absolute minimum. All wastage is recorded and where possible eliminate wastage
- Ensure that stock shortages are accounted for and that the necessary discipline is taken against employee where necessary.
- Ensure all relevant tools are in place to deliver expected results
**EMPLOYEE & STAFF RESPONSIBILITIES**:
- Responsible for the team health, energy, and group togetherness of the team
- Upliftment and moral building of entire team to extract peak performance
- Be responsible for and involved in the process of employee recruitment which includes the signoff / approval of all new hires in conjunction with HR
- Assist with the pre-planning of employee roster and work schedules (front and back of house) by the General Manager and signoff / approval from the Operator
- Provide ongoing employee training and daily coaching
- Ensure punctuality if employees and administering of discipline functions
- Regulate employee breaks and ensure prompt staff attendance
- Facilitate daily / weekly employee VIBE meetings (either daily or weekly)
- Be directly involved in employee discipline such as issuing of notices of suspensions as well as complaining in disciplinary hearings
