MAIN PURPOSE OF THE JOB:To prepare (cut, trim, debone, tie and grind) consumer-sized portions of meat according to customer-specific requirements and to ensure that meat market items are stocked, displayed and handled in line with food safety standards and company procedures.JOB OBJECTIVES:Staff productivity and teamworkDirect sausage maker and general assistants / meat packers routine activitiesCommunicate daily production schedules to ensure that meat preparation, packing and pricing can be done on time, based on customer needsProvide guidance and informal on the job training to new staff members (sausage makers and general assistants) in respect of recipes and the use of equipmentCoordinate and cooperate with other meat market staff to ensure smooth preparation of meat products as well as service to the customersCommunicate with Meat Market Manager if a problem occurs that cannot be solved on his / her ownSales maximisationDisplay counter is fully stocked with daily meat cuts before store opening time every dayPrepare and place meat cuts and products in display counter, so they will appear attractive and catch the shopper's eyeMeat market products are correctly labelled according to the price indicated for the product in order to prevent products being sold at the incorrect priceIntroduce new and promotional products to customersPlan the day before for the specials for the next dayWaste controlCheck expiry dates of meat packs on display counter every morning prior to store opening in order to scan out about to expire stock (rewraps) at cashier for reworking by sausage makerRework about to expire packed meat ("rewraps") for reprocessing (scanning, deboning, mince/ sausage preparation, packing, labelling)Do regular checks to ensure that meat products are still fresh and saleableCheck all meat deliveries according to checklist and company standards (i.e. meat quality and quantity, temperature check
