Production Manager

The Boning Hall Production Manager oversees all aspects of deboning, from managing the team and ensuring product quality to controlling costs and maximizing yields. Key responsibilities include leading staff, maintaining equipment, enforcing food safety, and reporting on production performance.

RESPONSIBILITIES:

Responsibilities associated with this role include but are not limited to the following:

• Manage and supervise the deboning team, plan production, and ensure all processes are followed to meet quality and output targets.

• Monitor and control product quality to meet standards and implement strategies to maximize yield and minimize waste.

• Oversee daily operations, ensure equipment is properly maintained, and enforce food safety and hygiene standards.

• Track key performance indicators (KPIs) such as production volumes, efficiency, and quality, and report findings to senior management.

• Co-ordinate and operate the production lines in terms of people, product, and equipment and maintain all associated paperwork.

• Report daily on all production related matters at the production meeting.

• Ensure that factory inventory is maintained correctly

• Key involvement in record keeping for production and completion of associated paperwork to ensure that both internal and external quality systems are adhered to.

• Plan and maintain running costs within budget.

• Plan, rosters and ensure the relevant people are scheduled to work on a daily basis, taking into account legislative requirements.

• Maintain constant adherence to all company, customer and legal requirements regarding food safety and quality assurance.

• Participate in manufacturing/operations meetings regarding product quality and processes.

• Ensure that the highest levels of Service, Quality and Workmanship are maintained at all times.

• Drive adherence to all HACCP systems and good GMP.

• Drive a culture of excellent adherence to Health & Safety by all employees through the maintenance of a safe working environment.

• Ensure department is audit ready 24/7

• Monitoring of productivity and performance of the department.

• Monitor and review the performance of staff and organize necessary interventions for improvement.

•Conducting of the annual appraisal and review process for team leaders.

• Supervising the work of departmental staff

• Identifying training needs and performing scheduled training on SOP's.

• Assist with setting run rates for all new products.

• Scheduling of holidays and overtime.

• Understand Company Quality Policy statement and implement its requirements

• Ensure that all customer expectations in respect of quality are met and exceeded where possible
• Monitor line giveaway on weights and packaging waste

EXPERIENCE:

•Minimum of 5 years in a similar position in an industry with high volume, short shelf-life chilled product.

• People management experience in a unionised environment.

• Proven experience as a blockman or butcher would be advantageous

• Experience with waste management, is essential.

• Knowledge of meat cuts, processing methods, and hygiene practices

FORMAL QUALIFICATIONS:

• Certificate or Diploma in production management.
