Job Summary

Cape Town Fish Market at the V&A Waterfront is seeking a highly skilled and experienced
Head Chef
to lead our kitchen team. The ideal candidate will have a proven track record in managing a high-volume restaurant kitchen, maintaining exceptional food quality, and driving team performance in line with our brand standards.

Key Responsibilities

  • Oversee all kitchen operations, ensuring consistency and excellence in food preparation and presentation.
  • Manage kitchen staff, including training, scheduling, and performance evaluations.
  • Ensure adherence to all health, safety, and hygiene standards.
  • Monitor food cost, stock levels, and wastage to achieve budgetary targets.
  • Collaborate with management on menu planning, specials, and seasonal offerings.
  • Maintain high standards of cleanliness and organisation in the kitchen.
  • Lead by example, fostering teamwork, motivation, and a positive working environment.

Requirements

  • Minimum
    5 years' experience
    in a busy restaurant kitchen, with at least
    2 years in a leadership role
    .
  • Strong understanding of seafood preparation and modern culinary trends.
  • Excellent communication and leadership skills.
  • Ability to work under pressure and maintain attention to detail.
  • Relevant culinary qualification preferred.

    Market related, based on experience and performance.
