**Job Summary**

The Back of House Manager will report directly to the Executive Chef, and Food and Beverage Manager.

**The Employee’s responsibilities shall include, among other things, the following**:

- Manage, lead and train BOH staff (Scullers)
- Assists with rostering and break schedules of BOH (scullery staff)
- Stock levels (completes requisition forms for additional stock needed)
- Manages Kitchen Hygiene practises (inspections)
- Runs all check lists and documentation daily for managing of kitchen cleanliness across each venue on the estate
- Monitors and document nightly deep cleaning of kitchens.
- Manage and oversee all work orders for completion
- Coordinates and assists with Banqueting functions (Banqueting OE to each Venue in accordance to each event)
- Upholds occupational health and safety practices (enforces these daily)
- Keep track of all supply levels in conjunction with Storeman.
- Work closely with the Food and Beverage Manager and the Executive Chef to achieve desired outcomes.
- Attend weekly meetings when required
- Ensure cleanliness is maintained throughout the building.
- Ensure the team reports maintenance issues regularly and that all maintenance issues have been attended to.
- Ensure regular training with sculler staff to upskill the staff working in the banqueting and back of house.
- Ensure productivity is achieved within the Back of house teams.
- Ensure departmental and Company objectives are met as per business plan.
- Upholds food safety regulations throughout kitchens and monitors spot checks (taking samples from buffet labelling and storing for audits)

**Staff Management**
- Performance reviews to be done quarterly with all staff within your sphere of management.
- Maintain the leave and sick reports and keep this on record for discussions with the relevant staff.
- Take correction action in case of staff discipline and misconduct.
- Conduct on-the-job training (OJT) and assessment with immediate subordinates.
- Ensure regular Meetings and briefings are conducted with the relevant staff.
