**Job Summary**
We are seeking a highly skilled Sous Chef to lead our culinary team in delivering exceptional dining experiences. As a key member of our kitchen brigade, you will work closely with the Head Chef to maintain high standards of food preparation and presentation.

**Key Responsibilities:**
  • Collaborate with the Head Chef to develop and implement menu plans, ensuring culinary excellence and adherence to health and safety guidelines.
  • Supervise and mentor junior kitchen staff, providing guidance and support to ensure smooth kitchen operations.
  • Manage inventory levels and control wastage to optimize profitability and efficiency.
  • Ensure cleanliness and hygiene standards are maintained in the kitchen and food storage areas.
  • Contribute to the development of new dishes and seasonal menus, working closely with the culinary team.

**Requirements:**
  • Proven experience as a Sous Chef or Senior Chef de Partie in a luxury hotel, lodge, or fine dining establishment.
  • Extensive knowledge of international and regional cuisines, including game meats and local ingredients.
  • Strong leadership and communication skills, with the ability to motivate and inspire the kitchen team.
  • Ability to thrive in a fast-paced environment and work well under pressure.
  • Excellent attention to detail and organizational skills, with a focus on quality and consistency.
  • Culinary degree or equivalent certification preferred.
  • Knowledge of food cost control and menu planning, with a focus on profitability and efficiency.
  • Understanding of health and safety regulations and protocols.
