About the Role

The Sous Chef at Malewane Lodge is a key member of the culinary team, responsible for assisting the Executive Chef and team in ensuring maximum guest satisfaction through effective kitchen operations and administration.

Main Responsibilities
  • Interact with guests to obtain feedback on product quality and service levels, ensuring a high level of customer satisfaction.
  • Respond to and handle guest problems and complaints in a professional and timely manner.
  • Develop and implement creative menu planning and food preparation strategies to enhance the culinary experience.
  • Stay up-to-date with new and local produce, trends, and product yields to ensure accurate costing and menu optimization.
  • Ensure that all recipes and product yields are accurately costed and reviewed regularly to maintain profitability.
  • Maintain high standards of food preparation, portion control, and waste minimization while adhering to standard recipe cards.
  • Monitor and manage food stock levels to ensure sufficient quantity and quality in relation to hotel occupancy and function forecasts.
  • Collaborate with the Front of House Manager and respective teams to ensure seamless service delivery.
  • Initiate maintenance reports and work orders as required to maintain a safe and efficient kitchen environment.
  • Delegate responsibilities to subordinates as needed to ensure effective team management.
Requirements and Qualifications
  • Culinary diploma (or higher) from a recognized tertiary institution.
  • At least 8 years' experience with 2 years in a management position.
  • Fair and firm management abilities with high influencing skills.
  • Strong administration skills, including computer literacy.
  • Creative and innovative approach to culinary operations.
  • Strong knowledge of food and beverage, with a hands-on approach to all operational aspects.
  • Excellent communication skills and ability to work effectively in a team environment.
  • Initiative and self-motivation, with a strong work ethic.
  • Ideal training and coaching skills to develop and motivate team members.

It is essential that the candidate is able to work as part of a team and is a good cultural fit for The Royal Portfolio. South African citizenship is advantageous, and a valid work permit is required if not in possession of a South African ID document. All staff are required to undergo a pre-employment polygraph test as part of the hiring process.
