Senior Culinary Operations Manager

Hyatt Regency Cape Town is seeking an experienced Executive Sous Chef to support the Executive Chef in overseeing daily operations of our restaurants. The ideal candidate will maintain high culinary standards, ensure efficient kitchen environments, and collaborate with cross-functional teams.
Main Responsibilities- Assist the Executive Chef in menu planning, recipe creation, and cost management for the restaurants.
- Supervise kitchen staff, promoting motivation, performance, and discipline within the kitchen.
- Oversee food preparation, cooking, and presentation to ensure quality standards are met.
- Maintain inventory control, ordering, and stock rotation to ensure freshness and compliance with health and safety regulations.
- Collaborate with the Executive Chef to improve kitchen standards and train junior chefs.
- Enforce hygiene and cleanliness standards through regular kitchen area inspections.
- Closely work with other departments to ensure smooth operations and excellent guest service.
- 8 years' experience as a Sous Chef and at least 2 years in a management role within hospitality or kitchen environments.
- Strong leadership skills with the ability to motivate and manage a diverse kitchen team.
- Excellent knowledge of food preparation, cooking techniques, and kitchen management.
- Exceptional organizational skills and attention to detail.
- Ability to work under pressure in a fast-paced environment while maintaining quality.
- Strong communication and interpersonal skills.
- Knowledge of food safety, health, and hygiene regulations.
