We are looking for an experienced kitchen manager to manage and oversee back of house operations.


Responsibilities include staff recruitment, training and scheduling, supervising food preparation and cooking, monitoring inventory levels, ordering stock and supplies and ensure compliance with safe food practices and health & safety regulation in the workplace.

In addition to being an excellent communicator, you should also demonstrate outstanding leadership and organisational abilities.

Duties and Responsibilities

  • Recruit, hire and train kitchen employees.
  • Oversee and schedule kitchen staffs' work shifts.
  • The Bossa menu is determined by head office and recipes set in place for all kitchens to follow.
  • Kitchen manager is responsible for ensuring that all employees, in their designation stations, must be properly trained on prep work, portion sizes and food plating techniques.
  • Supervise and oversee all food preparation and cooking procedures and processes in the various sections of the kitchen. Supervise and oversee employees in the kitchen and coordinate food orders to relevant sections.
  • Assist on the pass (expeditor), to check food plating (portion sizes, plating method and temperature) to ensure food is sent from the kitchen in an orderly manner.
  • Ensure staff training and compliance with food safety practices and regulations. Maintain sanitisation and safety standards in all areas of the kitchen, by ensuring compliance with health and safety regulations.
  • Ensure that any issues with kitchen equipment is immediately reported.
Monitor and manage inventory by placing orders as needed.

In collaboration with the general manager, ensure that inventory is ordered only from head office approved suppliers at the best price.


  • Complete all daily reports, check sheets and record stock movement (bulk and prep work) onto the system, printing and filling as required.
Work with staff to reduce food wastage.

  • Ensure proper reporting on all usage and wastages.
  • Ensure continuous effective communication between employees in the sections and with front of house team.
  • Ensure proper daily, weekly and monthly stock takes are completed accurately (stock, cleaning chemicals, cutlery, crockery and other kitchen smalls).

Requirements and skills

  • Proven work experience as a kitchen manager required, preferably in a highvolume restaurant kitchen.
  • Certification/qualification in culinary or management preferred, however not essentially required.
  • Familiarity and indept knowledge with kitchen sanitation and health & safety regulations.
  • Handson experience with ordering ingredients, stock storage and issuing procedures.
  • All recipes for the menu items are already in place. Be able to follow exact recipes and ensure that employees are adhering to the preparation procedures.
  • Excellent organizational and time management skills.
  • Outstanding communication skills.
  • Excellent conflict management abilities and problemsolving skills.
  • Ability to work and manage a team in a stressful and fastpaced working environment.
  • Flexibility to work shifts, weekends and public holidays.
  • Bilingual communication skills strongly preferred.
  • Computer literate, previous experience with Pilot software preferred.
