Restaurant General Manager- Fine Dining Restaurant

We are seeking an accomplished and dynamic General Manager to lead the operations of an ultra-luxury fine dining restaurant in Johannesburg. This role demands a visionary leader committed to upholding the highest standards of service, guest satisfaction, and operational excellence. This is a unique opportunity to join a prestigious establishment from its inception and play a pivotal role in its success.
**Key Responsibilities**:
**Operations**:
Implement action plans for operational and maintenance needs.
Ensure FOH managers complete required checklists.
Manage security protocols for the back-of-house area.
Troubleshoot restaurant management systems.
**FOH and Service**:
Oversee housekeeping of all customer-facing areas.
Coordinate Front of House security protocols.
Ensure correct plating and prompt service during meal times.
Maintain high service standards to drive excellent customer experiences.
Manage reservations and event coordination.
**Restaurant Administration**:
Manage cost of sales, ensuring efficient use of resources and achieving GP%.
Administer cash and deposits as per company procedures.
Confirm stock and menu item availability with kitchen staff.
Manage and order stock for food and drink items.
Conduct regular stock counts and address variances.
**People Management**:
Plan and coordinate training for kitchen staff on new menu items.
Authorize staff rosters and ensure adequate cover.
Manage onboarding and induction of new staff.
Conduct regular meetings with FOH managers.
Oversee training and development of all staff.
Set a positive example for punctuality, attendance, and hygiene.
Implement and manage disciplinary actions.
Maintain a harmonious work environment through mediation when needed.
Drive staff motivation and engagement through feedback and guidance.
Must have a minimum of 5 years of experience as a General Manager.
Proven experience in leading teams of over 50+ staff.
Fine dining experience is essential.
Must be located in Gauteng.
Must be very customer-focused and have the ability to inspire, motivate, and manage team members to consistently deliver their best.
