Food Service Supervisor

**Position Summary**

The Food Service Supervisor duties include but are not limited to menu planning and stock control, managing hygiene, safety and quality standards, control of equipment, cutlery and crockery. The Food Service Supervisor will, in the absence of the Manager, utilize their team to ensure that the best possible service is given and that standards of Food Service are maintained, and monitor daily production management.

Key Responsibilities

KPA 1: Cost, stock control & equipment management
- Manager orders and issues of stock according to company procedures
- Assist with crockery and cutlery counts
- Stores/ Fridge/ Freezers and chemical stores according to SOP
- Assist Food service manager with monthly stock take
- Ensure chemicals are diluted according to the specified measurements
- MSDS (Material Safety Data Sheet) - ensure employees are aware of personal safety measures when handling chemicals
- Ensure chemical storage room is neat and tidy at all times
- Coffee shop issue sheets, transfers and baking sheet must be up to date on Gerafin
- Report and keep records of all breakages of equipment and crockey
- Assist with annual inventory and stock take of equipment
- Report maintenance issues of any equipment
- Ensure employees are using equipment correctly
- Responsible for orders, stock take/stock control, issue sheets and variance report in the absence of the primary person responsible

KPA 2: Food preparation
- Oversee that the daily production plan is executed correctly.
- Supervise correct use of standardised recipes
- Ensure all food preparation are done according to company standards
- Ensure all meals are prepared according to correct colour, texture and nutritional values
- Ensure a well presented plate of food is presented to the residents and clients, that is on time and at the right temperature
- Ensure that all special diet meal and supplements are correctly prepared and clearly marked with the residents name
- Manage wastage & leftover meals
- Supervise food service in satellite kitchens
- Checking of all meals prepared for the next day and off-site consumption is to standard and ready for collection
- Ensure coffee shop offering is up to standard
- Oversee with coffee shop cash-up and inventory checks

KPA 3: Hygiene/ Health and Safety
- Supervise all cleaning tasks
- Assist with rehearsing emergency evacuation plans in cooperation with all parties
- Monitor work methods and time management regarding all tasks for food services
- Maintain and monitor good personal hygiene habits of all employees
- Monitor the wear of correct and clean uniform, name badge and closed shoes of all employees
- Ensure cleaning duties are carried out effectively
- Complete daily, weekly and monthly checklists as per OP Manual

KPA 4: Client service
- Employee is friendly, empathetic, courteous and of assistance to residents, clients and guests
- Be present in dining room and during functions
- Monitor client satisfaction and feedback, intervene to correct action or report to management
- Daily contact and communication with client and health care department - give feedback to management

KPA 5: Employee Management
- Act as shift leader
- Partake in recruitment and onboarding of new employees
- Monitor and control employee attendance and registers
- Ensure leave planner is in place for the year and communicate to manager to align with operations
- Plan, attend and partake in monthly personnel meetings
- Monitor employees performance according to the company code and procedures and report to manager
- Injury on duty - completion of relevant forms under the guidance of the manager
- Conduct daily production meeting and give feedback to management on issues
- Update employees personal details changes with manager
- Assist manager with performance evaluation discussions of employees
- Keep record of employee relations incidents
- Follow disciplinary procedures as per the company code of conduct in line with management
- Ensure teamwork to achieve company goals
- Ensure employee personal details are updated on company records

KPA 6: Training and attendance
- Report team absences to management
- Arrange cover or stand in for absences
- Ensure employees are abiding by the company’s rules on time and attendance
- Identify training needs of employees
- Conduct on the job training with employees (new and existing) as needed
