Senior Sous Chef Opportunity at Delaire Graff Estate

Hoseki Kitchen at Delaire Graff Estate is seeking a highly skilled and experienced Senior Sous Chef to join their team. As a key member of the kitchen leadership, you will work closely with the Head Chef to oversee daily kitchen activities, including staff management, menu preparation, and ensuring food quality and freshness.

Main Responsibilities:

  • Lead and manage the kitchen staff in the absence of the Head Chef
  • Provide guidance and training to junior kitchen staff members, including line cooking, food preparation, and dish plating
  • Oversee and organize kitchen stock and ingredients, ensuring a first-in, first-out food rotation system and verifying all food products are properly dated and organized for quality assurance
  • Keep cooking stations stocked, especially during prime operation hours
  • Train and assess staff on the job, promoting a culture of excellence and teamwork
  • Manage food and product ordering, minimizing waste and working with existing systems to improve waste reduction and manage budgetary concerns
  • Supervise all food preparation and presentation to ensure quality and restaurant standards
  • Collaborate with the Head Chef to maintain kitchen organization, staff ability, and training opportunities
  • Assist with menu creation and development, ensuring dishes meet the highest standards of quality and presentation
  • Monitor and maintain health and safety standards, ensuring a clean and safe working environment
  • Maintain accurate staff and leave rosters, ensuring seamless kitchen operations
  • Ensure that all CDPs are familiar with the weekly and daily reservations, events, and menu requirements
  • Verify that each dish leaving the kitchen meets quality, quantity, presentation, and temperature standards

Main Requirements:

  • Culinary Diploma or equivalent
  • Minimum 4 years of experience in a senior chef role
  • Valid driver's license and own transport
  • Strong leadership and management skills, with the ability to motivate and develop a team
  • Excellent communication and interpersonal skills, with the ability to work effectively in a fast-paced kitchen environment
  • Basic computer skills, including Microsoft Office
  • Exceptional customer-service skills, with a focus on delivering exceptional dining experiences
  • Strong organizational skills, with the ability to prioritize tasks and manage multiple responsibilities
  • Attention to detail, with a focus on maintaining high standards of quality and presentation
  • Availability to work within opening hours, including evenings, public holidays, and weekends
