Restaurant General Manager

We need a General Manager to be responsible for all operational aspects of the store, among them:

- Manage the full scope of the business - coffee shop, deli and bakery
- Maintain the required quality of our product and service, as mandated by the Franchise, and measured by the various quality control audits - the Monthly Audits carried out by the Franchisor’s Operations Manager; the Hygiene Audits; and the Mystery Shopper audits;
- Maintain and manage relationships with the Franchisor and its various representatives, and with the team at the Central Bakery;
- Maintain and manage relationships with all suppliers, service providers, and Landlord;
- Maintain and manage relationships with walk-in customers, as well as potential business-customers (e.g. restaurants, caterers, events companies, guest houses, for our bakery items, e.g. breads, croissants, pastries, etc.)
- Manage both FOH, BOH and Bakery staff, and ensure that they are consistently up-to-speed with all aspects of their respective roles;
- Drive the financial performance of the business, to achieve the monthly and annual targets set, among them**:Turnover**:

- Food costs
- Staff costs
- Other overhead costs
- Net Profit

Prior experience and/or understanding:

- Operational management of a coffee shop / restaurant, minimum 5-7 years as a manager
- Prior background to general management should be BOH (kitchen experience)
- Management of a bakery / the baking function within a coffee shop / restaurant
- Good grasp of the financials of a restaurant / coffee shop, and understanding the impact of operations on financial performance. Among the skills required**:Compiling files of accurate invoices for the bookkeeper**:

- Managing Staff schedules and understanding cost implications
- Being able to manage / control food costs as a percentage of turnover
- Being able to control daily and monthly expenses and budgets set
- Being able to review management accounts to assess financial performance.
- Must show good problem solving skills
- Must be able to take instruction and direction, and work accordingly without autonomy in line with agreements.
- Must be a good team leader
- Must show good people skills (in dealing with customers)
- Won transport
