**Our client, a well-known group of Cape Town restaurants, is looking for a Group Operational and Food & Beverage Manager to join their team in Gardens, Cape Town.**

**Minimum Requirements**

**Grade 12**

**Excellent Communicator**

**Team Player**

**At least 5 years of manager experience in the restaurant/hospitality environment.**

**A keen eye for stock control and the ability to spot discrepancies quickly.**

**Operations**:
**Working with suppliers for all stores.**

**Work closely with chefs and managers re menu updates and costings. Assist where necessary.**

**Update menus for print - check quality of menus in store on a regular basis.**

**Look at invoicing/prices and compare to costings - sit with relevant parties to update pricing and ensure website and socials are updated too.**

**Compiling all maintenance issues for operations manager.**

**Check for renewal of all certificates (Liquor Licenses/Business License/COAs).**

**Working with the IT department for websites and social media platforms - login details.**

**Monitoring daily cash up reports.**

**Making sure stores are adhering to all hygiene standards and making sure we receive our store assessments every month.**

**Liaise with contact on suppliers re stock deals/promotions etc.**

**Ensure uniforms are done and distributed accordingly.**

**Spend time in store with staff to ensure flow is constantly checked. Adjust for requirement.**

**Plan the month in advance - events happening, road closures etc.**

**Additional Duty: Cover managers on off days where necessary if need be.**

**Meet with Divine Intervention to plan the year ahead re deals/promotions etc.**

**Beverage**:
**Monitors and takes corrective action as necessary to help ensure that beverage costs are attained.**

**Ensure staff is delivering exceptional customer service and maintain high beverage and service standards.**

**Ensure that all standard operating procedures for revenue and cost control are consistently utilized.**

**Help plan external and internal marketing and sales promotion activities.**

**Implement and monitor consistency of beverage policies and procedures.**

**Assist with the development of wine sales promotion programs.**

**Assist with staff recruitment.**

**Ensure correct handling procedures to minimize China and glassware breakage and beverage waste.**

**Responsible for the proper accounting and reconciliation of Point-of-Sale systems and revenues (Reports).**

**Assist with daily, weekly, and month-end inventory.**

**Maintain company standard beverage cost of all outlets.**

**Consolidate weekly and monthly beverage figures. Monitor and investigate fluctuations and variances.**

**Follow up on training for staff with wine supplier/contact - where needed.**

**Ensure targets are set and incentives are run through the year.**

**Nurture relationships as we always had - SAB/DISTELL/PERNOD especially.**
