he Chef de Partie is responsible for overseeing a specific section of the kitchen, ensuring efficient and high-quality food production. This role supports the Senior Sous Chef in delivering the highest culinary standards, maintaining stock control, and ensuring food safety across all venues at the racecourse. The Chef de Partie plays a key role in managing the daily operations of their section, ensuring that food preparation, presentation, and cleanliness are consistently upheld.
What You'll Do
  • Manage the day-to-day operations of a designated section within the kitchen, maintaining high standards of food preparation and presentation.
  • Follow standard recipes and portion control guidelines to ensure consistency in taste and appearance.
  • Assist the Senior Sous Chef with menu development by providing input on dishes, seasonal offerings, and portion sizes.
  • Ensure the correct storage and stock rotation of ingredients to minimise waste and maintain quality.
  • Support cost control measures, contributing to the achievement of the target GP.
  • Maintain a clean and organised workspace, adhering to health, safety, and food hygiene regulations.
  • Train and guide junior kitchen staff, fostering a team-oriented environment.
  • Assist with stock takes and inventory management to ensure the section is well-prepared for service

What You'll Need
  • Experience in a high-volume kitchen, ideally in a Chef de Partie or similar role.
  • Knowledge of cost control and stock management practices.
  • Strong organisational and communication skills to work effectively within a team.
  • Ability to work well under pressure, maintaining attention to detail and quality.
  • Understanding of food safety regulations and kitchen hygiene standards.
