**Job Summary**
An entrepreneurial individual capable of establishing a catering kitchen to operate as a Business Unit. Appoint and oversee the culinary staff, place orders for culinary items and direct and assist with the overall preparation of the food which is served in the dining establishment.
The successful incumbent must be able to ensure the successful delivery of uncompromising service and a variety of meals, whilst leading a team and dealing with the day-to-day running of the Canteen to serve internal and external guests.
Food and beverage manager will need to plan, organise, direct, control and evaluate the operations.
**Responsibilities**
- Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
- Preserve excellent levels of internal and external customer service
- Design exceptional, attractive menus, purchase goods and continuously make necessary improvements
- Identify customers’ needs and respond proactively to all of their concerns
- Lead F&B team by attracting, recruiting, training and appraising talented personnel
- Planning menu items and any specials which the dining establishment offers to its patrons. Creating the recipes with or without input from the assistant chefs.
- Developing and perfecting recipes, taking into consideration dietary requirements.
- Preparing a few or many of the menu items on a weekly basis, as required by changing circumstances.
- Establish targets, KPI’s, schedules, policies and procedures
- Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
- Comply with all health and safety regulations
- Report on management regarding sales results and productivity
- Ensure that customers are satisfied with food and service.
- Check food and beverage supplies and place orders when needed
- Ensuring that all food-handling regulations are abided by and that everyone under his/her charge is aware of these items. Ensuring that safety standards and sanitary requirements are constantly met.
**Requirements and skills**
- Proven food and beverage management experience
- Working knowledge of various computer software programs (MS Office, restaurant management software (Pilot), POS)
- Ability to spot and resolve problems efficiently
- Mastery in delegating multiple tasks
- Communication and leadership skills
- Up to date with food and beverages trends and best practices
- Ability to manage personnel and meet financial targets
- Guest-oriented and service-minded
- Culinary school diploma or degree in food service management or related field
