**JOB DESCRIPTION**

Job title: Restaurant & Bar Manager

Reporting to : Food & Beverage Manager

Job summary:
Responsible for the leadership of the F & B Team to the hotel's 5 star standards and to manage all menus charging stock control and the point of sale system, responsible for seeing that the restaurant and bar is clean and properly stocked.

To ensure that inventory is done accurately and correctly and training of staff members.

Assist in house, outside guests and VIP members, take their orders and serve them immediately when orders are prepared. When guests have departed their tables or poolside loungers, quickly reset tables and pool loungers( and towels). Responsible for knowing menu items, prices and creating specials. Must perform any addition assistance work as required.

DUTIES:
Ensure that prior to service time, the bar is ready for service and all suppliers and utensils and glassware are on hand and ready to serve the guests (previous days shift to ensure that the bar is fully stocked and cleaned for the next day service)

Responsible for checking and maintaining the par levels and any orders that need to be made in order to maintain them.

Prepare drink orders, and responsible for the preparation of the fruit and drink garnishes.

All drink orders and food orders at the bar to be recorded/charged immediately once been taken from the guest and the bill or docket to accompany the beverage when it is served and to be signed by the guest. Closing of bills must be done accurately and correctly according to the hotels standards.

Responsible for the bars to be clean and neat at all times.

To be responsible for inventory, store room, ordering and stock rotation.

Greet all guests of the hotel, on the patio, in the bar or pool areas with a smile.

To ensure that all staff members follow standard procedures and checklists at all times.

Check in with guests regularly for any side orders and requests, and to anticipate the guest’s needs and go beyond their expectations.

Informing your manager of any immediate or anticipated shortages.

When guests are ready, take their orders, charge immediately and place the order in the kitchen and or bar (prepare and serve orders when necessary) Once guests have completed their meals or drinks, remove dishes and glasses and present the menu and ask if there is anything else you could assist them with.

Ensure that all the tables and side tables, loungers are ready and clean.

SPECIFICATIONS:
Requires knowledge of the menu items of food and beverage and item prices and service standards. Familiarity with the specials and upselling of menu items and beverage to all guest of the hotel, proper cleaning and setting procedures, and must be able to speak and write basic English.

SKILLS:
Must obtain the necessary standards and skill to make a guest feel welcome at all times, legible handwriting and basic mathematical skills, and provide courteous, tactful, friendly and efficient service. Knowledge of menus, drinks and prices.

PHYSICAL:
Must be clean and neat in appearance at all times and must wear the correct uniform, have pleasant personality, and be able to carry a loaded tray without dropping or breaking any operating equipment.

**Salary**: R7,500.00 - R12,000.00 per month
