- Experience in management and monitoring of staff.
- Control and management of stock knowledge
- Ability to control Food Cost of all areas.
- Ensure that company assets are safeguarded and appropriately maintained.
- Control over maintenance of occupational health and safety in terms of the OHSA.
- Control of cash on a daily basis.
- Banqueting Management, control.
- Analyse and interpret daily turnover and food cost results.
- Determine and implement corrective / proactive action.
- Providing marketing initiatives and implementation of marketing programmes.
- Working knowledge of labour legislation and basic knowledge of SA labour law.
- Knowledge of operational standards and procedures of a kitchen including preparation.
- Regularly evaluate operating costs and keeping cost to a minimum whilst not affecting standards.
- A strong sense of analytical skills, decision making, problem solving, results focused and self-motivated.
- Must be able to work under pressure and meet deadlines.
- Good staff relations to maintain a comfortable and productive working environment for all concerned.
- Manage shift rosters, staff leave and absenteeism.
- An independent thinker to manage creatively and competently.
- Manage team performance.
- Manage customer relationships; ensure highest possible level of customer service and dealing with customer complaints.
