**Deputy Bakery Production Manager**

FMCG Company based in East London, Eastern Cape seeks a capable Production Manager. This is not an office position; the position is one which requires one to be on the production floor for the full duration of production.

**Requirements**:

- 5 years’ experience in commercial bread and bakery confectionery production
- Previous/current employment in a similar position
- Ability to manage and handle a team of employees
- Familiarity with commercial/industrial large scale baking equipment
- Quick problem-solving skills
- Ability to work under high pressure
- Fit and able to pace production floor
- Long hour shifts

**Baking Duties**
- Ensuring a high-quality product is produced consistently
- Adherence to recipes
- Implementing systems to avoid wastage/ Damages entirely or to reduce to minimum. Ensure that employees are held responsible for negligence pertaining to production related matters.
- Create a high quality, sellable product.
- Ensure yields are achieved, all product in process counted and verified during production.
- Use experience in diagnosing problems on machines and ensure implementation to improve production, reduce labour cost and wastage as per targets..
- Synchronize plant equipment and optimize speeds and efficiency.

**Break Downs**
- Action immediately, take preventative action to ensure production continues/product is saved and a plan is made when a breakdown occurs.
- Instruct, supervise and manage situation and repairs until fully operational.
- Ensure Breakdown reports are handed in and breakdowns recorded, take action where negligence of employees cause the breakdown.

**Create and implement systems and Manage all Employees**
- Ensuring employee discipline on time, correct PPE, masks, action all deviations daily.
- Ensuring the company is not overstaffed throughout the production period
- Ensure employees are will trained and well informed of company policies (Shoes, earrings, chains, rings, mop caps, overalls etc.)
- Ensure staff are always aware of efficiencies and quality requirements,

**Stock Control**
- Manage and police systems to control stock in and out of the storerooms.
- Ensure you are aware of and in control of your stocks daily sign off required with stores.

**Cleanliness, Order and System**
- Ensure production facility is always clean to HACCP standards.
- Implement the new Standard Operational Procedures and ensure daily compliance.
- Ensure equipment, clothing, gloves etc. and not left and thrown all over the place.
- Ensure setting and neatening of equipment (pans/trays to be neat and in one set area if not used.
- Create a sense of order in the factory in terms of staff, daily process flow**s, **product in process, cooling, production to dispatch

Reports
- Compile and present all **required reports** daily
- Report and Analyze variances against Targets/Budgets/Forecasts and success of rectify action plans

**Salary**: R7,000.00 - R20,000.00 per month

Ability to commute/relocate:

- East London, Eastern Cape: Reliably commute or planning to relocate before starting work (required)

**Experience**:

- Bakery: 3 years (preferred)
