JOB SUMMARY

This position serves as an entry-level management role focused on effectively achieving daily kitchen objectives. The individual will assist in guiding the culinary team while actively participating in various kitchen operations, including food preparation, procurement, and sanitation practices. This role plays a crucial part in ensuring satisfaction for both guests and employees while adhering to the operational budget.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.

OR

A 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional field.

CORE WORK ACTIVITIES

Upholding Culinary Standards and Responsibilities

  • Adheres to food handling and sanitation protocols.
  • Executes all tasks of culinary and related kitchen personnel during peak times.
  • Oversees the production and preparation of culinary offerings.
  • Ensures cleanliness and sanitation of work areas.
  • Collaborates with Restaurant and Banquet departments to synchronize service and meal timing.
  • Follows loss prevention policies and procedures.
  • Strives to enhance service performance.
  • Communicates areas needing attention to staff and follows up to ensure compliance.
  • Leads shifts while personally preparing food items and fulfilling requests based on required specifications.
  • Prepares and cooks a variety of foods, either regularly or for special occasions.
  • Supervises and coordinates the activities of cooks and kitchen staff engaged in food preparation.
  • Inspects the quality of raw and cooked food products to ensure standards are met.
  • Assists in determining food presentation and creates appealing food displays.

Supporting Culinary Team Activities

  • Oversees daily shift operations.
  • Ensures all staff have the necessary supplies, equipment, and uniforms.
  • Manages staffing levels to meet guest service, operational needs, and financial goals.
  • Ensures completion of assigned tasks.
  • Participates in employee performance evaluations, providing feedback as necessary.
  • Addresses employee inquiries and concerns.
  • Communicates performance expectations in line with job descriptions for each role.
  • Engages in ongoing employee recognition initiatives.
  • Conducts training as appropriate.
  • Monitors employee progress towards meeting performance standards.

Maintaining Culinary Objectives

  • Participates in departmental meetings and consistently communicates clear and coherent messages regarding departmental goals to achieve desired outcomes.
  • Supports and assists with new menu items, concepts, and promotions for Restaurant outlets and Banquets.

Delivering Exceptional Customer Service

  • Sets a positive example for guest relations.
  • Addresses guest issues and complaints, seeking assistance from supervisors when necessary.
  • Empowers employees to deliver excellent customer service within established guidelines.

Additional Responsibilities

  • Reports equipment malfunctions within the department.
  • Procures necessary supplies and manages food and supply inventories in accordance with budgetary constraints.
  • Attends and participates in all relevant meetings.
