duties and responsibilities:
- operate brewhouse brewing system.
- make additions to batches.
- capture data per batch - mash ph, wort ph, rinsing seconds, gravity per batch, 2x flowmeter readings per batch.
- run daily cip's kze, bottling line, keg line.
- pasteurize beer for filling.
- checks on all fermentation tanks daily.
- review co2 levels captured by cellar staff and communicate adjustments to be made.
- yeast harvesting and managing use.
- yeast hydration and pitching for brewing.
- prepare all ingredients for upcoming brews.
- dry hoping beers.
- mixing of flavored beers.
- oversee and manage cellar activities.
- weekly bh cip.
- managing generator diesels levels.
- keep the brew house book up to date on activities happening during the day.
- do daily lock up procedure at brewery.
- check that beer to be filled on the day adheres to quality and packaging specifications, sign off before production can commence.
- run cleaning cycles on filling equipment prior to production.
- check in with production staff during the day to see if they are on schedule, if not changes to production program needs to be made.
- communicate with malt handler and ensure batches are being prepared and loaded as per brewing schedule.
- cellar staff must be made aware of tanks that need to be prepared and cleaned for beer to be brewed.
- keep documentation regarding brew's and traceability up to date.
- communicate faulty equipment to maintenance department and head brewer.
- communicate low stock levels of raw materials to brew master.
- give input on recipe development and improvement.

- must be flexible as nightshift work is required.

minimum requirements

- formal brewing specific course or tertiary qualification in food science, winemaking, engineering.
- a minimum of 3 years industry related working experience is required.
