Our resident butcher performs animal slaughtering and butchering of farm raised animals. Breaking down carcasses into primary and secondary cuts - tenderizing, deboning, trimming, tying, grinding, and preparing meat for cooking or creating specialized meat products. The Charcuterie butcher is responsible for creating different type of sausages, smoked meats and dried meat products.

**EXPERIENCE / QUALIFICATIONS**
- Trade qualified Butcher
- Good working knowledge for doing a wide range of charcuterie & speciality products

**JOB DESCRIPTION**
- Experience with specialty meats, terrines, pates, sausages, salamis, etc.
- Creative recipe and menu design; including creating specials based on seasonality and availability changes.
- Strong communication skills and team attitude.
- Develops and maintains sanitation, cleanliness, and organizational standards.
- Ability to use kitchen hand tools and equipment such as knives, meat slicer, meat grinder, food processor and smoker.
- Ability and skill to establish and maintain effective working relationships with coworkers.
- Knowledge of food hygiene and safety requirements.
- Adhering to food safety and sanitation controls.
- Manual skills.
- Precision and physical strength.
- Keeping records and inventory.
- Coordinating deliveries or order pickups.
- Knowledge of animal anatomy.
- Must be able to produce quality meat products - biltong, boerewors, cured meats, sausages etc.
