SOUS CHEF - Franschhoek
Our client, an upmarket restaurant in the Franschhoek valley, is looking to employ an experienced SOUS CHEF to join a small, focussed team.
We are looking for someone with a strong culinary skill set, with a love for food, previous experience in running and managing a busy, high
- End kitchen operation, quality driven, a strong leader, stable and able to perform under pressure. At least 3- 5 years Senior Sous Chef experience, ability to lead and develop a team.
Applicants need to reside in the local vicinity of work.
- A formal Culinary Education
- Minimum of 3 - 5 years? experience as a Sous Chef in a busy hotel kitchen environment
- Assist with menu planning and costing recipes, food consumption, strict stock controls, stock management, stock movement, rotation and ordering and supplier liaison
- Excellent control of food cost, wastage and kitchen preparation
- Ongoing staff training and development
- Ensuring the team has high standards of food hygiene and follow the rules of health and safety
- Valid driver?s licence and own reliable transport
- Proven track record with examples and references

**Responsibilities**:
Assist in directing the food preparation process and delegating tsks, assisting the Head Chef to create menu items, recipes and develop dishes, supervising all kitchen stations, inventory management, ongoing staff training and development, ensuring the team has high standards of food hygiene and follow the rules of health and safety.
