Durban, South Africa Lupo Bakery Full time

**ROLES AND RESPONSIBILITIES**:

- Supervise and control assigned department as determined by the Production Manager
- Utilise knowledge and skills to supervise subordinates and assign tasks to ensure that assigned department’s production process is effective
- Ensure that production orders are completed within the prescribed time frame as determined by the Production Manager
- Report any deviations from specification to Production Manager immediately
- Utilise knowledge and skills to be accountable for all functions within assigned department
- Ensure that materials used are within specification as determined by the Production Manager
- Fully understand and implement the company’s Food Safety policy and work in conjunction with the Production Manager to ensure that high levels of food safety are upheld in the production process
- Fully understand and implement the company’s hygiene and housekeeping policy throughout assigned department
- Ensure that subordinates employ safe methods when working with machinery and report non-performing / malfunctioning machinery through the correct processes in consultation with the Production Manager
- Ensure that all documentation (e.g., yields and shortages) is completed on a daily/weekly/monthly basis as required by the Production Manager
- Monitor and review performance of all subordinates in consultation with the Production Manager
- Ensure that all equipment is always kept neat and tidy
- enforce the “Clean as You Go “principle.
- Control and give paraffin reading daily - work with the production
- factory manager on this:

- Oven management
- Paraffin management, with a focus on oven and product efficiencies, through the oven.
- Prover management through to the ovens
- Controlling/ maintaining oven waste and prover waste
- Controlling prover temperature and oven temperature
- Understanding gaps in the oven and gaps in the plant
- Different products proving time/baking time work in different conditions.
- Work hand in hand with production manager, scheduling and planning to be aware of imitating factors around production.

5 years’ experience baking/manufacturing
