Operations/general Manager

Durban, South Africa Specialist Confectionery Full time

A successful specialist confectionery business requires an **Operations / General Manager** to manage the people, products, processes and output of the entire confectionery production in Durban / KZN

The company's new production operations will be in PineTown, KZN, which is where the production manager will be based

Must have at least 5 years experience ideally in managing a bakery / confectionery or a busy BOH restaurant / catering in a high volume environment

Knowledge and passion for pastry and confectionery products and design creativity in creating unique and exciting products is a big plus

Relevant qualification in the hospitality industry and at least 5 years work experience in pastry / confectionery / chef

Strong organization capabilities, attention to detail and relevant experience in costing products

Strong management and leadership skills as well as ability to motivate, train and develop people to reach their maximum potential

5 years experience in setting, measuring and optimizing food production processes

Deep understanding of health and safety procedures and regulations and ability to enforce such in a production environment

High level of responsibility and ability to communicate effectively the state of production (people, products and processes) output to top management

Excellent MS Office and PC / POS skills, especially Microsoft Excel

**Duties and Responsibilities**:
Manage employees, have weekly meetings with supervisors, resolve issues, discipline staff (warning forms, hearings). Plan, authorize and manage employee shifts

Manage daily production plan for confectionery based on branch stock levels

Check stock count and oversee supplier orders and stock levels are adhered to to to ensure production continuity

Ensure correct daily dispatch of orders and confectionery

Check pricing and sign-off on all incoming invoices

Have driver's license and own vehicle and occasionally source non standard supplies and ingredients that may be needed

Identify and resolve production and branch maintenance issues (electrical, refrigeration, shop-fitting, baking equipment)

Resolve customer issues (orders, service etc)

Manage Vehicles (services, fuel consumption, repairs, accidents, insurance, fleet cards)

Oversee security procedures, cameras and hand out consequences to offenders

Improve branch sales performance: set branch monthly sales targets, motivate and reward branches that met their targets. Visit branches and ensure customer service and procedures are followed

Ability to commute/relocate:

- Durban, KwaZulu-Natal: Reliably commute or planning to relocate before starting work (required)

**Experience**:

- Managing Restaurant or Food Production: 5 years (required)

License/Certification:

- Drivers License and own Vehicle (required)
