**Overview**
My client, an opulent River Lodge nestled within a pristine Big 5 Nature Reserve, stands as a newly constructed 5-star Safari Lodge. Its allure lies in its awe-inspiring natural surroundings and expansive riverfront vistas. Currently, they are in search of an unwaveringly committed and seasoned Head Barman / Butler with strong Food and Beverage Experience. This individual will be entrusted with the task of not only providing guests with an extraordinary level of service but also overseeing the seamless day to day running of the food and beverage waiter staff, initiating service setup, mis-en-place, stocking of the bars, table setups and any required displays in preparation for the serving of all meals and drinks based on guest requirements
**Remuneration Structure**

**Requirements**:
- Matric
- Excellent command of the English Language
- Experience in hospitality / guest interactions and service
- Valid SA driver’s license
- Strong leadership ability & management skills
- Strong sales skills
- Sound wine knowledge
- Stamina and the ability to work long hours where needed

**Job specifics**
- The main role of your job will be to welcome, attend to and serve all drink related items to guests during their stay at the lodge, including but not limited to welcome drinks, high tea beverages, speciality coffees, cocktails, wine, alcoholic and non-alcoholic beverages
- You will be responsible for the preparing of the lounges, outside decks, public areas and terrace tables and seating areas to ensure they are cleaned and ready for guests to sit at, and to also ensure that you regularly clear and wipe down tables being utilised by guests
- To work behind the designated service bars in use and assist in the service of drinks at the swimming pool and other guest spaces being utilised
- To collect and distribute ice from the kitchen into the plastic storage bags to store in the freezer, garnishes for cocktails, coffee requirements and to stock the bars and ice buckets as required
- The preparation of and serving of all hot drinks as advertised in line with the coffee choices we offer to our guests, consisting of but not limited to cappuccinos, espressos, filter coffees and Irish/ liqueur coffees
- You will also be required to assist in the preparation of the welcome drinks and drinks to be prepared for guests back from game drive and other activities
- To assist with the issuing and distribution of all items from the store during issuing times and to also assist in stock being taken to the relevant bars
- To ensure all drinks consumed are recorded accurately in the POS system for stock control purposes, and for any charges to be recorded for non-inclusive purchases
- To conduct regular stock takes as prescribed by the lodge manager, which will also facilitate any orders that need to be placed
- Report any maintenance issues that are come across during the performing of your duties, including but not limited to chairs, tables, lightbulbs, furniture, or equipment that you use
- Butler requirements will be based on assignment to the private villa, and will include the aforementioned duties, as well as the overall responsibility of the cleanliness and preparedness of the private villa before and during a guests’ stay
- To carry out any other reasonable duties as deemed fit by management
