- Responsible for preparations and planning within the cellar relating to all bulk orders as per the agreed schedule.
- Responsible for the preparation of wines according to client’s specifications for bulk loading including blending, fining/treating, stabilisation, final adjustments and tasting ( Internal
- and external Cellars )
- Oversees the operation and daily tasks of the cellar operators/assistants to ensure operations flow smoothly and standards and specifications are according to requirements.
- Ensure all external samples and analysis meet client specifications, feedback to external cellars if any adjustments are to me made
- Assist with smooth operations of the Cross flow filtration, candle filters (mobile unit) and Cold stabilization units.
- Responsible for the final tasting and signing off on wines for export (internal and external). A complete analysis sheet must be signed off prior to loadings.
- Responsible for bulk loadings according to the agreed procedures of the company within the QC standards.
- Oversees that all samples of external loadings are booked in the lab and meet the client specification.
- Communicate with external cellars and do planning on loadings at external premises and the adjustment to be done on the wines according the client specification.
- Responsible for planning of all external loadings
- Responsible for the preparation of the products that needs to be filled on outside premises according to client’s specifications.
- Responsible for the final tasting and signing off on wines that get filled on outside premises. A complete analysis sheet must be signed off prior to loadings
- Completes SAWIS documentation including WSR1’s, pink cards and other wine intake related documentation.
- Responsible for export submissions and relevant documentation.
- Captures daily wine movements.
- Maintain work instructions/cleaning records and ensures they are kept for traceability.
- Carries out a daily chemical stock take and orders when required by completing PO’s.
- Ensure recordkeeping and documentation of bulk loadings according to internal procedures.

**Qualifications**:

- Relevant degree or diploma in winemaking or minimum of 5 years’ experience in similar environment
- Wine and blending process knowledge
