A large retail group is looking for a dynamic and skilled individual to take upon the role as a HMR/Deli Specialist for our Johannesburg division
**Purpose**: Be responsible for maintaining a well-run delicatessen management team by ensuring smooth operations and positive customer experiences through the group’s deli managers.
**Job Summary**
We are seeking a HMR/deli specialist to manage our dynamic team and ensure health and safety protocols are being followed. The deli specialist will also monitor deli managers/controllers as well as product quality standards and ensuring great customer experiences. The Deli Specialist is responsible for sales, gross margin, profitability and merchandising activities. They will also communicate company and department policies to their internal team as well as work closely to help achieve the store’s goals.
**Essential Duties and Responsibilities**
- Lead a team of Deli Managers/Controllers that are store based; conduct meetings and enforces discipline.
- Oversee and track stock on a weekly basis
- Analysis of reports to understand setbacks as well as growth factors.
- Direct, influence and assist department to increase sales.
- Purchasing and overall management of inventory
- Inspection of food products that are prepared and ensure quality and safety.
- Determine areas for improvement and institute changes to address concerns, ensure that the range is effective for that store.
- Ensure that all food hygiene and safety standards are met and keep up to date with industry standards.
- Communicate with stores to design marketing plans (advertising) to achieve profits.
- Determine costing and set meal prices
- Conduct deli training, merchandising, sales, and profitability growth.
- Administration: Signing off on invoices, timesheets and checklists, draft duty roster
- Input plans, conduct department meetings, advocate for retailers’ ad items.
- Share current industry trends and changes with group
- Control department expenses by enhancing operations, meet budgeted goals and control shrinkage and wastage
- Ensure that managers/controllers are exercising disciplines in controlling and monitoring shrinkage and wastage levels

- Knowledge of delicatessen products
- Knowledge of delicatessen operations & hygiene and safety standards
- Operation of delicatessen equipment.
**Experience**
- Grade 12 (Matric)
- At least 3-5 year experience as a HMR/Deli Manager looking for growth
- Proficient in MS Office Applications.
- EXPERIENCE IN THE RETAIL/CULINARY INDUSTRY IS ESSENTIAL FOR THIS POSITION
