**Job Summary**:We are seeking a Butchery Specialist to manage our group of dynamic butchery managers. He/she will ensure health and safety protocols are being followed and will also monitor the quality and be responsible for sales, gross margin, profitability. The Butchery Specialist will also communicate company and department policies to the internal teams as well as work closely to help achieve the group’s goals.

**Essential Duties and Responsibilities**
- Estimate requirements and order meat supplies, negotiate with representatives from supply companies to determine order details.
- Ensure managers receive, inspect, record and store meat upon delivery, to ensure meat quality and safety
- Ensure the group’s butchery management team exercise hygiene control and maintain excellent housekeeping protocols in compliance with health departments.
- Ensure that butchery managers follow food hygiene and safety standards and keep up to date with industry standards
- Develop constructive and cooperative working relationships with your team and encourage mutual trust, respect and cooperation. Assist and care for co-workers and suppliers.
- Travel to the various locations where the group’s Spar’s are based.
- Come up with new ideas, to build and improve the butchery management.
- Conduct on-the-job training and coaching to butchery managers and motivate and develop your team including setting objectives & strategies.
- Administration: Signing off on invoices, timesheets and checklists, draft duty roster.
- Purchasing, management and control of inventory; stock checks; exercise the first in first out principal and control wastage.

**Competencies**

- Strong communication skills; both written and verbal
- Excellent organizational and time management skills.
- Excellent computer skills (Excel, Microsoft Word, PowerPoint).
- Strong problem-solving skills
- Coping under pressure and setbacks
- Basic knowledge of first aid will be advantageous.
- Knowledge of meat market operations & hygiene and safety standards

**Experience**
- Minimum **2 years** management experience within the Meat industry
