**Job Title: Blockman**

**Location: Paarl, South Africa**

**Job Type: Part-Time**

**Experience Required**:

- Minimum **3 years** of experience as a Blockman
- Must **reside in the Paarl area**

**Key Responsibilities**:
**Meat Preparation & Processing**
- Expert in **all cuts of meat**:

- **Deboning** of all fresh meat
- **Trimming, sorting, and bagging** meat
- Ensuring **proper portioning and cutting** of steaks and primal cuts as per customer specifications
- Using **machinery and tools** to cut, slice, and grind meat
- **Inspecting and sorting** meat based on quality, size, and type
- Removing **bones and trimming fat** to obtain the required product
- Operating **butchery equipment, including the bandsaw**

**Food Safety & Hygiene**
- Ensuring **cold rooms** are **clean and neat**:

- Following **proper meat handling procedures** to maintain freshness and prevent contamination
- Maintaining a **clean and sanitary** work area, complying with **food safety regulations**:

- Ensuring **traceability** of meat products (Transfers on relevant system)
- Checking **sell-by and expiry dates**:

- Adhering to **HACCP food safety standards**:

- Monitoring **cold chain temperatures**

**Stock & Inventory Management**
- Managing **stock rotation** (**FIFO - First In, First Out**)
- **Stock control and ordering** to ensure sufficient carcasses and finished products
- Conducting **stock take** and informing supervisors when stock levels are low
- Reducing **waste** through proper **portion control and packaging**:

- **Weighing and pricing** meat correctly
- **Merchandising and promoting** stock according to laid down procedures
- Preventing **wastage, shrinkage, and damages**

**Customer Service & General Duties**
- Providing **excellent customer service** and **technical information** on meat cuts
- Preparing and breaking **various meat carcasses** according to specifications
- **Manufacturing mince, sausages, biltong and boerewors**:

- Assisting with **training staff** on new products and procedures
- **Receiving and inspecting meat deliveries**:

- Ensuring **butchery-related equipment and utensils are clean**:

- Assisting with **point-of-sale operations**:

- Assisting in **maintenance and repair of equipment**

**Meat Packing**
- **Cleaning meat cuts** after processing
- **Packing meat** in specified packaging as directed
- **Wrapping and sealing meat** using manual or automated methods
- **Weighing and pricing** packed meat
- **Arranging meat products attractively** in display cases

**Job Type**: Part-time

Pay: R4 000,00 - R7 000,00 per month

Expected hours: 10 - 20 per week
