POSITION SUMMARY

Job Overview:

  • A Sushi Chef is responsible for preparing high-quality sushi dishes in a restaurant setting. The role includes mastering traditional Japanese techniques and creating both traditional and innovative sushi for guests. Sushi Chefs are skilled in handling fish, seafood, and other ingredients, ensuring the highest standards of taste, presentation, and safety. This position requires a keen eye for detail, artistic flair, and an ability to work efficiently in a high-paced kitchen environment.

Key Responsibilities:

Sushi Preparation:

  • Prepare sushi rice, fish, seafood, vegetables, and other ingredients for sushi dishes.
  • Slice fish and seafood with precision to the correct thickness and presentation.
  • Prepare rolls, nigiri, sashimi, and other sushi varieties, both traditional and modern.
  • Prepare and maintain ingredients such as sauces, garnishes, and pickles.

Menu Development:

  • Create new and innovative sushi dishes, incorporating seasonal ingredients or unique flavor combinations.
  • Work with kitchen managers or head chefs to develop sushi menus and ensure variety.

Quality Control:

  • Ensure the quality, freshness, and taste of all dishes.
  • Monitor the preparation process for consistency and adherence to recipes.
  • Maintain hygiene standards, including cleanliness of prep stations and storage areas.

Customer Interaction:

  • Occasionally interact with customers at the sushi bar, providing recommendations and explaining dishes.
  • Take special orders and accommodate dietary restrictions as needed.

Kitchen Management:

  • Maintain inventory of sushi ingredients, and order supplies as necessary.
  • Ensure proper food storage techniques are followed to maintain freshness and prevent contamination.
  • Work with other chefs and kitchen staff to maintain a clean, organized work environment.

Safety and Compliance:

  • Ensure all health and safety standards are met, including food handling and sanitation practices.
  • Comply with local food safety regulations, such as safe handling of raw fish and seafood.

Qualifications:

  • Proven experience as a sushi chef or in a similar culinary role.
  • Knowledge of traditional sushi preparation and knife skills.
  • Experience with different types of sushi, sashimi, and other Japanese dishes.
  • Strong understanding of food safety standards, particularly with raw fish.
  • Excellent time management and multitasking skills.
  • Creative and passionate about sushi making.

Preferred Skills:

  • Culinary school certification (especially in Japanese cuisine).
  • Experience in high-volume kitchens or fine dining establishments.
  • Knowledge of Asian culinary techniques beyond sushi.

Physical Requirements:

  • Ability to stand for long periods of time.
  • Ability to lift and carry up to 50 pounds.
  • Strong hand-eye coordination and manual dexterity for delicate sushi preparation.

Education

  • High school diploma/G.E.D. equivalent
