**Position Summary**:
The Head Baker is responsible for overseeing all baking operations within the hotel’s culinary department, ensuring the production of high-quality breads, pastries, and baked goods that meet 5-star standards. This role requires both hands-on production and strong leadership to guide the bakery team, maintain consistency, and innovate the product offerings.

**Key Responsibilities**:

- **Production & Quality**:

- Plan, prepare, and oversee the baking of bread, viennoiseries, desserts, and specialty items.
- Maintain consistency in taste, texture, and presentation across all baked goods.
- Develop new recipes and seasonal offerings aligned with current trends and guest preferences.
- **Team Leadership**:

- Supervise and schedule bakery staff, ensuring proper training and performance.
- Mentor junior bakers and apprentices, fostering a culture of excellence and continuous learning.
- Conduct regular briefings and ensure smooth communication within the bakery and broader kitchen team.
- **Standards & Compliance**:

- Enforce hygiene and sanitation standards in compliance with HACCP and hotel policies.
- Ensure that baking operations are aligned with 5-star hospitality service standards.
- Monitor inventory, forecast needs, and manage bakery ordering and stock rotation.
- **Collaboration**:

- Coordinate with Executive Chef, Pastry Chef, F&B outlets, and event planning teams.
- Customize baked items for banquets, weddings, and special events.
- Maintain collaborative relationships with suppliers to source top-quality ingredients.

**Required Skills & Qualifications**:

- Formal culinary or baking qualification (e.g., diploma in Baking & Pastry Arts).
- Minimum 5-8 years of baking experience, with at least 2-3 years in a leadership role.
- Experience in a luxury hotel or fine-dining environment preferred.
- Expertise in artisan breads, viennoiserie, laminated doughs, gluten-free, and international baking styles.
- Strong leadership, time management, and communication skills.
- Passion for innovation and detail-oriented craftsmanship.

**Physical Requirements**:

- Ability to stand for extended periods.
- Must be able to lift up to 25 kg.
- Work flexible hours, including weekends and holidays.

Pay: From R16 000,00 per month
