a Fast growing restaurant group is seeking an experienced Restauranteer which will join its team in opening an upper tier restaurant in Cape Town in the capacity as Owner-Operator.

This person should be young, vibrant and extremely driven.

EXTREMELY IMPORTANT: This person would need to be trained in Pretoria before assuming the role in Cape Town. The training would take approximately 1-2 months.

This person shall receive a monthly salary and a choice of either profit share or 10% equity in the business.

The duties and responsibilities of this role will include:
**FINANCE RESPONSIBILITIES**:

- Overseeing and approval of payment schedules
- Overseeing and approval of waiter tips and payments thereof
- Signoff and approval of employee monthly salaries
- Oversee and sign-off of all cash ups.
- Reconciliation of bank statements and payment recons on a bi-weekly basis which is inclusive of a midweek check as well as weekend check and compilation of Excel report.
- The Operator is responsible for cash flow management and ensure that there is sufficient funds in the account to pay operating costs.
- Release of payments on a weekly basis on preset days.

**ADMINISTRATIVE RESPONSIBILITIES**:

- Daily Meter readings and control checks (water, gas etc) as well as compilation of report with previous months readings and reporting of variances.
- Oversee Daily Check sheets and SOP’s.
- Maintenance of employee discipline, warnings and disciplinary hearings.
- Fulfilling of daily operational functions within the shop
- Responsible for reporting of maintenance and repairs within the shop as well as finalisation of such through contractors (if required).
- Taking of Fridge and Freezer Temperature readings on a daily basis.

**STOCK CONTROL RESPONSIBILITIES**:

- Processing and ordering of new stock.
- Do regular price comparison and liaise with suppliers to negotiate on price.
- Ensure quality control and implementation of franchise standards.
- Responsible for stock control
- Responsible for stock take monthly.
- Conduct daily stock freshness and rotation checks with Chefs and Managers
- Ensure that shop wastages are kept to an absolute minimum and where possible eliminate wastage.
- Ensure that stock shortages are accounted for and that the necessary discipline is taken against employee where necessary.

**EMPLOYEE RESPONSIBILITIES**:

- Be responsible for and involved in the process of staff recruitment which includes the signoff / approval of all new hires.
- Assist with the pre-planning of employee roster and work schedules (front and back of house) by the General Manager and signoff / approval from the Operator
- Provide employee training and daily coaching.
- Regulate Staff breaks and ensure prompt staff attendance.
- Facilitate weekly employee VIBE meetings.
- Be directly involved in employee discipline such as issuing of notices of suspensions as well as complaining in disciplinary hearings.

**CUSTOMER RELATIONS RESPONSIBILITIES**
- Be interactive with customers & deal with customer queries and complaints.
- Oversee and implement Shop hygiene and cleanliness.
- Ensuring quick and efficient service to patrons in the shop.

**OPERATIONAL RESPONSIBILITIES**:

- Coordinate Uber Eat, Mr D, take away and sit-down orders.
- Conduct opening and closing procedures of shop. (Gas valves, plugs, extractions, plugs etc.)
- Marketing Correspondences and implementation. This is inclusive of the discussion of marketing reports and requisite planning.
- Ensuring that all areas within the shop are running optimally daily.
- Facilitation of weekly General manager meetings.
- Co-ordinate Bookings Schedules through mail to Management and waiters
- Ensure weekly cash on hand and collection and correct packing thereof.

**Salary**: R28,000.00 - R32,000.00 per month

Ability to commute/relocate:

- Cape Town, Western Cape: Reliably commute or planning to relocate before starting work (required)

**Experience**:

- Restaurant Management: 8 years (required)
